Heritage Pork Rib Chops with a Sweet & Tangy Glaze

Ingredients:

  • 4 heritage pork rib chops (bone-in, about 1 inch thick)
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp dried rosemary

Instructions:

  1. Preheat the oven to 400°F.
  2. Season the pork chops on both sides with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 3–4 minutes per side.
  4. Transfer the skillet to the oven and bake for 10–12 minutes, or until the internal temperature of the pork reaches 145°F.
  5. While the pork is cooking, mix together the garlic, honey, Dijon mustard, soy sauce, apple cider vinegar, and dried rosemary in a small bowl.
  6. Remove the skillet from the oven and brush the sauce on top of the pork chops. Return to the oven and bake for another 2–3 minutes, or until the sauce is slightly caramelized.
  7. Serve the pork chops hot, garnished with fresh rosemary if desired.
