Since then, we have expanded our offerings considerably to include a variety of other exotic and wild raised meat in addition to well-sourced kitchen staples. We’ve worked hard to perfect our methods of shipping for nationwide ordering. Each cut of meat has been flash frozen at the peak of freshness and packed by hand with dry ice and gel packs in reusable, industrial strength coolers. Our carefully designed methods of packing ensure that when you buy fresh meat online, it arrives in excellent condition. All of our meat is always without any antibiotics, hormones or steroids of any kind. Our bison are raised on our beautiful ranch here in northern New Mexico, as well as from our carefully selected partner ranches. We supply bison meat to hundreds of restaurants across the southwest and thousands of families nationwide. Our elk meat is sought after by restaurant chefs for its delicate flavor and tender texture. We source elk from the northern Rocky Mountain region as well as the pristine mountain valleys of New Zealand. Heritage pork is the newest addition to our offerings, from a small farm on the Rio Grande River. The pigs are completely free range and raised as an agricultural therapy element of a drug rehabilitation program.
Some people have had wild boar meat from less than premium sourcing and found it to taste “gamey”. When we tasted our wild boar for the first time, we were absolutely blown away. These fully wild boars are humanely trapped and transported under the supervision of specialized veterinarians to ensure that they experience minimal stress. Our lamb is sourced straight from the pristine foothills of Mount Ruapehu on New Zealand’s North Island. They live a happy, free range life raised by the Maori people. We choose New Zealand lamb because of the innate sustainability of farming sheep in the unique climate of this country.
Our American Wagyu beef is raised on the same ranch as our bison, right here in northern New Mexico. They roam free, living essentially wild on wide open pasture with high quality grain available. Our chicken comes from a small co-op of family farms in sunny Colorado. They’re cage free and raised with care in spacious sunlit barns with plenty of room to roam, cozy bedding and the care of chicken behavioral specialists. Our duck bacon comes from carefully selected Indiana farms, many of which are under the care of Amish and Mennonite farmers who have been raising ducks for generations.
Pristine Wild Caught Alaskan Seafood
We were thrilled when we were able to start carrying wild caught seafood from the pristine waters of Alaska. All of our seafood is caught by fishermen we know by name. We’re extremely fortunate that co-owner JP Bulow’s brother is a commercial fisherman on Kodiak Island. We know exactly where all of our fish comes from, and the waters are some of the coldest and purest in the world. All of our salmon is bled on the boat for optimal flavor and texture, and every catch is flash frozen right on the docks at the absolute peak of freshness.
We have always worked exclusively with small-scale local butchers. Old world butchery is hard to come by in our fast paced modern world, and we strive to bring back this missing element of where our food comes from. We are currently opening our own butcher shop located in Santa Fe, New Mexico. And for those that are not located nearby, we offer home meat delivery nationwide from our online butcher shop.
